Domaine Paul Garaudet is located in the heart of the Côte of Beaune, between Volnay and Meursault. Paul Garaudet is the 4th generation to cultivate the family estate. The estate is 10.5 hectares—5.5 hectares of which are planted with Pinot Noir on the appellations of Pommard, Volnay, Monthelie and 5 hectares are planted with Chardonnay white grape variety on the appellations of Monthelie, Meursault, Puligny-Montrachet.
The Monthelie ‘Cuvée Paul’ is harvested with a good maturity, it’s totally destemmed, and then a cold maceration is made from 5 to 8 days. The alcoholic fermentation occurs naturally with indigenous yeast. This fermentation is slow and lasts between 20 to 25 days. The wines are devatted and barreled by gravity in the cellar. The malolactic fermentation is done naturally. The maturing on the fine lees in a barrel lasts from 12 to 18 months, with 1/3 of the barrel new. The red wines are not fined, only a slight cooling help to clarify them. Sustainable.
