Valpolicella made in the Ripasso method in which five- or six-month-old Valpolicella is fermented on the lees of the newly made Amarone giving it more alcohol, color, aroma and body. The resulting flavor-enriched Valpolicella takes on the rich raisiny characteristics of the Amarone, bigger structure and the ability to age for many years.
