This blanc de noir champagne method sparkling wine was harvested in the early morning to keep the fruit cold. DUring the entire winemaking process the temperature was kept under control to retain as much of those subtle sparkling aromas as possible. About an even split of Dijon 667 and 777 clones were used. Great acidity, a light baking spice aroma and fresh pear dominate this wine. An excellent example of a California sparkling that can compete with the French counterparts.
