Grape Collective's Lisa Denning sat down with Château de Saint Cosme winemaker Nicolas Chevrol, who has been working with Barruol since 2016, to discuss the teroir of Gigondas and the winery's hands-off approach to winemaking.

Whenever we have a wine that strikes us deeply, we know there’s a story we want to hear. We have found Jason Haas, the second-generation partner and general manager of Tablas Creek, to be particularly thoughtful and eloquent over the years. So we called him to learn more about this wine – and, of course, it turns out that the story begins with his mother, Barbara, now 83. The following has been edited for length. 

The Bura-Mrgudić winery, nestled in the heart of Croatia's stunning Pelješac peninsula wine region, epitomizes the country's rich winemaking heritage and commitment to quality. Founded by the Bura and Mrgudić families who have been cultivating vineyards for over a century, the winery focuses on traditional winemaking techniques that aim to capture the essence of the local terroir.

We recently met Rachel Allison, 34, who has a doctorate in wine flavor chemistry from Cornell University. A paper she co-authored there, about the formation of reductive, off aromas (rotten eggs) in canned wines, was selected 2024 Best Enology Paper by the American Society for Enology and Viticulture. The organization will celebrate her and her co-authors at this year’s conference in June in Portland. She works in Manhattan at a large management consulting company.
