Belief in Terroir Like A Belief in God?

What is the science behind terroir? And what does it have to do with religion? UC Davis Professor of Viticulture and Enology David Mills has something to say about both questions.

He's been conducting experiments to see if terroir is actually the result of distinct, regionally-specific yeast, fungus, and bacteria on wine grapes. The Sacramento Bee details his work, including his thoughts on whether he is hoping to scientifically prove that terroir exists. For now, the philosophical Mills states, “At this point, asking me whether I believe in terroir is like asking me if I believe in God–it’s very difficult to prove or disprove. But people believe in it fervently.”
